  • ✓ 4 apples, washed, cut up
  • ✓ 1 Tablespoon lemon juice
  • ✓ 1 1⁄2 teaspoon cinnamon
  • ✓ 1⁄4 teaspoon allspice
  • ✓ 1 teaspoon vanilla
  • ✓ 1 cup pitted dates (about 8 dates)
  • ✓ 1 cup filtered water
  • ✓ 1 Tablespoon cornstarch
  • ✓ 1 Tablespoon filtered water
  • ✓ 1 vegan pie crust
  1. Place the dates and filtered water in a glass container and heat on microwave for about 1 minute. Let soak about 10 minutes until soft. Place in a small blender and blend until smooth.
  2. Add apples, lemon juice, spices, and date mixture in a medium pot. Cover with a lid and heat on medium until apples are just fork tender (about 10 - 15 minutes). Make sure to stir frequently and monitor so that it does not burn.
  3. Mix up cornstarch in 1 Tablespoon room temperature filtered water and whisk up in a little cup. Add to the cooked apple mixture and mix up well. Take it off the burner. It should thicken up as you stir it.
  4. Add the apple mixture into the prepared pie crust and bake about 20-25 minutes in preheated oven at 350 degrees.
  5. Let cool and serve!

You could pre-bake the pie crust and let it cool before adding in the warm filling. Then just bake until heated (about 10-15 minutes)
